The size of the finished fruit is realistic!
For work, you need a pair of straight knitting needles. For a realistic sized apple and pear, use about 2mm diameter needles.
You can use any of the knitting sides as the front side: the wrong side gives a smoother surface and a more realistic result, and the front side will give a very interesting pattern of the work (transverse braids).
