Appearance: solid mass of light yellow odorless color.

Composition: stearic acid (over 90%), oleic acid, linoleic acid, caffeine, tannins, vitamin F.

Cocoa butter is a valuable, completely natural product that is obtained from cocoa beans. After fermentation and sorting, they are crushed and pressed, as a result of which it is released. Another common method for obtaining cocoa butter is extraction, and this method, developed at the beginning of the century before last in the Netherlands, now produces a very significant part of it.

Composition and properties of cocoa butter
Cocoa butter contains:

Fatty acid;
Esters of glycerol;
Amino acids;
vitamins;
Microelements.

Saturated fatty acids such as stearic and palmitic together account for more than 50% of this product. In addition, about 33% of cocoa butter is oleic acid. The rest is mostly esters of glycerol.

Of the vitamins, cocoa butter contains only two: vitamin E (tocopherol) and vitamin K. Tocopherol is a powerful antioxidant and immunomodulator, and as part of cocoa butter, it is almost completely absorbed by the body. Vitamin K is valuable because it is actively involved in the processes of blood clotting and has a pronounced wound healing effect. As for amino acids and microelements, they are quite rich and in a considerable amount are presented in the composition of cocoa butter.

Unlike many other vegetable fats, at room temperature, cocoa butter is not liquid, but a solid state of aggregation. Its melting point ranges from +28c ° to +36c °.
