a little taste of morocco reveals the influences of many cultures, including the Phoenicians, the Romans, the Arabs and the indigenous Berbers, on a cuisine noted for its vibrant flavours and aromas. This collection of recipes, all of them achievable in the home kitchen, has been created by Mediterranean food specialist and writer Tess Mallos and the chefs of the Murdoch Books Test Kitchen. 
As well as recipes, there are special features on traditions that encompass the Moroccan way of life. Discover the street food sold in the souks, the delicacies that are offered in tea houses and the extravagance of diffa or banquet food. 
The photographic team travelled extensively in Morocco to capture evocative images of the produce, cuisine, landmarks and lifestyle.
