Potassium sorbate is a preservative, potassium sorbic acid salt obtained by neutralization of potassium hydroxide acid. Potassium sorbate is registered as a food additive E202.

Formula: C6H7KO2. Resistant to temperature changes, non-toxic, non-allergic.

Potassium sorbate is industrially obtained synthetically, and is also isolated from some plants (seeds are used).

Potassium sorbate: a popular and safe preservative. The substance has antimicrobial and antifungal properties, inhibits bacteria, fungi, yeast and the action of enzymes.
